Here you have the inner workings of the Thermostat. I usually cannot reveal the details unless you have a security clearance but here goes. The copper plug is there to collect the heat and provide it to the spring. Now the spring is made of two different metals. When they get to 180 degrees or so they loose some of the spring and the thermostat opens.
